DESARROLLO DE ALIMENTOS E INGREDIENTES FUNCIONALES RICOS EN COMPUESTOS BIOACTIVOS A PARTIR DE FRUTAS

Resumen
En la actualidad es creciente la demanda de los consumidores por alimentos con cualidades promotoras de la salud. En los últimos años ha crecido la investigación sobre el potencial antioxidante de frutas y vegetales capaces de proteger a las células humanas de los efectos dañinos de la oxidación. Las frutas más populares son del denominado grupo “berries”, que poseen un alto contenido de antocianinas y polifenoles que contribuyen a su elevada actividad antioxidante. Por otro lado, el desarrollo de alimentos beneficiosos para la salud es una de las principales tendencias de la industria alimentaria. En este contexto surgen los alimentos funcionales, que afectan favorablemente a una o varias funciones del organismo.
El objetivo general del grupo de investigación es la formulación de alimentos e ingredientes funcionales utilizando dos tipos de materias primas: frutas (berries y pomáceas) y residuos de la industria frutícola. Se desarrollan distintos tipos de alimentos (snacks deshidratados y jugos) e ingredientes funcionales en polvo (colorantes naturales, ingredientes ricos en fibra). Se hace especial hincapié en la utilización integral de las materias primas y la valorización de residuos de la industria con alto potencial en cuanto a compuestos antioxidantes y fibra. Además, se emplean tecnologías tipo “green process” para favorecer la extracción de compuestos bioactivos de manera amigable con el medio ambiente, tales como la aplicación de pulsos eléctricos de alta intensidad y extracción asistida por ultrasonido, que permiten obtener productos de alto contenido de fitoquímicos.
Se realiza un estudio integrando características físicas, funcionales y sensoriales de los productos. También se analiza la bioaccesibilidad y la biodisponibilidad de los compuestos bioactivos.
Summary
Nowadays, consumers’ demand for food with health promoting characteristics is growing. Research into the antioxidant potential of fruits and vegetables has been growing in recent years, in order to protect human cells from the harmful effects of oxidation. The most popular fruits are the so-called “berries” group, which have a high content of anthocyanins and polyphenols that contribute to their high antioxidant activity. On the other hand, the development of foods that have a potentially positive effect on health is one of the main trends of the food industry. In this context functional foods arise, which favorably affect one or more functions of the organism.
The general objective of the research group is the formulation of food and functional ingredients using two types of materials: fruits (berries and pomaceous) and wastes from the fruit industry. Different types of products are developed: food (dehydrated snacks and juices) and functional dehydrated ingredients (natural colorings, ingredients rich in fiber). Special emphasis is placed on the integral use of raw materials and the recovery of waste from the industry with high potential in terms of antioxidant compounds and fiber. In addition, “green process” technologies are used to promote the extraction of bioactive compounds in an environmentally friendly manner, such as the application of high intensity electric pulses and ultrasonic assisted extraction, which allow products with a high content of phytochemicals.
A study is carried out integrating physical, functional and sensorial characteristics of the products. Bioaccessibility and bioavailability of bioactive compounds are also discussed.
